I’m 5’7 ( height ), I was just wondering if a Triumph Speed Triple 2008 Model would suit and FIT me for a beginner ? Or maybe a 2008 Aprilia Shiver 750 ? I like the “naked” look on the motorcycles.

NO! I love the Speed Trip myself, but I’ve been riding since before maybe even your dad was born. It is a sport bike without a fairing!
Look at the Thruxton, Scrambler, Bonneville, or maybe even the Tiger 800 as first bikes. The Shiver might be an ok first bike too.
But the important thing is that you already have the basic skills to START learning from. I hope you already took the MSF Beginner Rider Course. If not, whether or not you already have your bike license, TAKE IT AND LIVE!

I love both of those bikes, but they are not a good choice for a beginner.
Take a rider course, please. you get your license through the course – much easier than having to deal with the DMV and you get a break on your motorcycle insurance too in many cases.
Start with something with less displacement, less expensive and prone to breakage when you drop it. Yes, everyone drops their bike once or twice when they are learning. Buy used.

I will say no, this is not a good bike for a beginner. Not as bad as big displacement sport bikes, but a big powerful bike never the less.
First, sign up for the Motorcycle Safety Foundation Beginning rider course. Get your license in hand. Next, please read the articles below. In my mind, this is required reading for any beginner.
Here is more advise. ALWAYS get a quote on insurance before you buy any motorcycle.
A smaller bike is easier to ride. Big powerful bikes will hinder the learning process.
When you gain skill, you will find it is more fun to ride fast on a slow bike than to ride slow on a fast bike.
Take a look at the SV650 Suzuki. The twin is a much easier bike to ride due to smoother power delivery.
After you gain some experience sign up for an intermediate riding course such as the Total Control clinic.

The Ape is not a bad idea, the Triple is.
Some other suitable bikes would be the Triumph Thruxton (or any bonneville the thruxton is the most sporty) Ducati Monster, Suzuki SV650, Suzuki GS500E, Hyosung GT650, Kawasaki EN6-R or Honda CB750 Night Hawk
